Recipe: swirling White Chocolate bark with Matcha, Rose Petals and Sea Salt

Truth be told, I was never hugely into St. Valentine’s Day. Yes, it is lovely to receive a little special attention from your partner on any given day, but it’s not something I’d lose sleep over if that wasn’t the case specifically on the 14th of February. It is also not lost on me that it is a recurrence that is bound to make some of those who are not in a relationship (by choice or otherwise) feel somewhat lacking and even miserable.
Ultimately, St. Valentine’s is a celebration of love, and I think we can interpret it in a broader sense than just the romantic type. More than anything, it is a chance to show someone you love how you feel about them, be it your partner, a friend, or (even better) yourself.
It’s also a great time of the year to get crafty and spend time in the kitchen, what with the weather being so soppy outside and it being dark by 4 pm. So why not take some time to do something that is easy as a breeze, really fun, and results in something beautiful that you can gift a loved one?
For full disclosure, I executed and shot this recipe for a lovely client who commissioned me some lifestyle content for their brand to use on their channels. It was such a joy to make, and I was so impressed with the results, that I had to share it with you guys (with the brand’s permission of course).
Don’t worry, I’ll walk you through all the steps!
Ingredients
4 bars of good-quality white chocolate
2 tsp of Matcha (I have used Avantcha’s Cocktail Grade Matcha, links below)
1 tsp rose petals (I again used Avantcha’s)
Rose petals1 pinch of flaky sea salt (I used Malton’s)
Method
Gently melt the white chocolate in a bowl with a water bath/bain marie: simply put the bowl with the broken bars in a pan half filled with water on low/medium heat, stirring regularly until all the chocolate has melted.
In a separate smaller bowl, mix the Matcha with 4 spoonfuls of the melted chocolate until fully incorporated. Feel free to add white chocolate until you reach a consistency that is easy to scoop and dollop.
Pour the white chocolate on a sheet of parchment paper and spread it out using a spatula so that it’s roughly half a centimetre thick. It doesn’t need to be precise!
Spoon a few dollops of the matcha-infused chocolate on the white chocolate, and using the back of the spoon, start lightly tracing figures in an 8 shape to create the marbling effect.
Once you are happy with the swirls, sprinkle the rose petals and sea flakes all over
Refrigerate until solid (you can use the freezer to speed up the process)
Break up the bark into smaller pieces and pack it up in a nice jar or transparent pouch. Add a lovely ribbon et voilà !
