“Depending on the season or what I have in my possession, I like to style this panna cotta with different fruits to add colour and flavour contrast. They’re delicate and perfumed with just the gorgeous jasmine tea for a comforting pud, but you might like to try a classic strawberry coulis or (if you’re feeling wild like I was) sea buckthorn berries you pinched off a bush in Pegwell Bay macerated in sugar overnight.”
